Today, Palmer's signature Progressive American cuisine continues to dazzle under the kitchen leadership of Executive Chef Tony Aiazzi. The sharply focused flavors in dishes such as Grilled Lamb Loin and Merguez stuffed artichoke, and Seared Tasmanian Salmon with roasted cauliflower succotash are supported by over 600 American and European wines, with a concentration on white and red Burgundies.
